The preparation of trachanas is complicated but the result is amazing. When cooked well, the mixture thickens, when formed into small oblong pieces spread out in the sun to dry. The dried pieces are stored and maintained for such long periods.

Each time the housewife wants to cook soup trachana, takes a similar quantity stored dry pieces and put in water, which swell and open. Then bake in a fire, usually in a beef broth. While the soup is cooked, it may add little quantity of fresh milk. It can also be added halloumi, cut into small pieces and baked it into the soup. The trahana served warm, adding salt, pepper and lemon.
