Zivania or Zivana is a traditional Cypriot alcoholic beverage with typical alcohol content is 45% by volume.
Zivania has been traditionaly produced in Cyprus since the 14th century.
Zivania is made from mature healthy grapes of the best quality. Zivania is a distillate produced from the pomace of grapes that were pressed during the wine-making process mixed with high-quality local dry wines produced from local grape varieties of Cyprus such as Xynisteri and Mavro.
The distillation of zivania takes place in special traditional apparatus similar to those used for the production of tsipouro. Zivania is characterized by its taste and aroma. It is colorless and pleasantly alcoholic with a light aroma of raisins. Its Zivania contains no sugars and has no acidity.
There is white and red zivania. Red zivania is made by adding spices like cinnamon.
Zivania has been protected under EU regulations as a product unique to Cyprus. So, it cannot be produced in any other country and marketed under it's name.
Zivania is clear and strong in taste. Zivania is the Cypriot traditional aperitif, served ice-cold with the local meze (meat, tsamarela, haloumi, salami, xiromeri) or dried fruit and nuts.
